Cinnamon Maple Pecan Butter

I love pecans, and I love cinnamon and I love maple syrup so I thought one day why not combine them all and make a nut butter out of them. Pecans are not the cheapest nuts to buy but are totally worth the expensive price tag. I got mine in Lidl for €2.99 for 200g. Since you will be grinding them in a food processor, you can buy broken pecan pieces rather than halves which may be cheaper as they aren't as aesthetically pleasing as the pretty looking halves.

200g pecans
1tbsp cinnamon (feel free to add more or less depending on your taste)
1-2tbsp maple syrup (depending on your taste)


1. Preheat oven to 160C. Line a baking sheet with greaseproof paper.
2. Add the Pecans to the baking sheet and place in the oven for about 10 minutes, just until you can smell them - be careful, they can go from nicely toasted to burnt very quickly.

3. Place the toasted pecans in a food processor and process until a paste starts to form, you will need to stop the processor every few minutes to scrape down the sides. This can take anywhere from 10-15 minutes depending on the power of your food processor.

4. Next add the cinnamon and maple syrup and process again just until mixed through. 

5. Transfer to a clean and preferably sterilised jar (fresh out of a hot dishwasher will do, otherwise place jar and lid not touching on a baking sheet in the oven while the nuts are toasting about 10 minutes)

6. This will keep in the fridge for 2-3 weeks after making. 

7. Enjoy with cut up apple slices, on toast, or even stir it into porridge.
